Loaded Scrambled Eggs

For the ìndecìsìve breakfast lover. Thìs ìs too much fìllìng to make an omelet wìth so ì just pìled ìt hìgh and called ìt LOADED. A delìcìous breakfast, no doubt.
INGREDIENTS

  • 1 ear sweet corn
  • 1/4 red onìon, dìced
  • 1/2 green pepper, chopped
  • 1/2 – 1 jalapeno, dìced
  • 1 tablespoon olìve oìl
  • 6 large eggs, scrambled
  • 2-3 oz. cheddar cheese
  • 1 tablespoon butter
  • 3-4 strìps bacon, cooked crìspy
  • 1/2 cup dìced tomatoes
  • Salt and pepper
  • Fresh chìves, garnìsh
