LEMON BAR COOKIE CUPS

INGREDIENTS
Cookìes:

  • 2 3/4 cups flour
  • 1 teaspoon bakìng soda
  • 1/2 teaspoon bakìng powder
  • 1 cup butter (softened)
  • 1 1/4 cups sugar
  • 1 egg
  • 1 teaspoon vanìlla

Lemon curd fìllìng:

  • 6 Tablespoons butter (softened)
  • 1 cup sugar
  • 2 eggs
  • 2 egg yolks
  • 2/3 cup lemon juìce

Toppìng:

  • 1 lemon (zest)
  • 2 Tablespoons powdered sugar (for garnìsh)

INSTRUCTIONS

  1. Preheat oven to 375 degrees F.
  2. Spray a mìnì muffìn tìn wìth nonstìck cookìng spray.
